1 pkg instant brown rice (cooked according to pkg directions)

1 onion, diced

1/2 green bell pepper, cut into 1/2-1″ pieces

1/2 orange bell pepper, cut into 1/2-1″ pieces

1 can red beans, rinsed and drained(or 1 can black beans,rinsed and drained)

1 cup fresh corn, cut from cob(or 1 can whole corn,drained)

1 can Rotel tomatoes

1 Tbsp parsley (or cilantro)

1 cup salsa

2-3 Tbsp olive oil

 

In large skillet over high heat, brown onion and bell peppers. Add beans, corn, and Rotel tomatoes. Cover with lid until heated through and corn is tender.

Add rice and parsley. Cover and turn off heat until ready to serve. Add 1-2 Tbsp salsa over servings for added flavor!

 

I love this Burrito Bowl because it is full of flavor and nutrition! It is very filling and wonderful served with chips seasoned with paprika!
