2 meatless sausages, sliced to 1/4″

Black Beans, Quinoa, and Meatless Sausage

1 can black beans, drained and rinsed

1 onion , chopped to 1/2″

2 Tbsp olive oil

1 cup quinoa, prepared separately

Sea Salt and ground Black Pepper to taste

 

In a large skillet over high heat, saute onion and sliced sausage on olive oil. Add black beans and cover for 5-7 minutes until vegetables are tender.

Meanwhile, add quinoa to 2 cups boiling water for 10 minutes. Drain water and stir-in quinoa to black bean and sausage entree. Season to taste and enjoy!
