3 1/2 cups whole wheat flour

Vanilla Bunny Cake with Agave

2 tsp baking powder

2 tsp baking soda

1/2 tsp sea salt

2 cups almond milk

2 Tbsp apple cider vinegar

2 tsp vanilla

1 1/2 cups agave

1 cup olive oil

spray olive oil

1 can vanilla icing

1 pkg unsweetened coconut

1 pkg dark chocolate M&Ms

 

 

Mix flour, baking powder, baking soda, and sea salt together and set aside. Add apple cider vinegar to almond milk and set aside. In mixing bowl, add flour mixture and milk mixture and stir in vanilla, agave, and olive oil. Mix together only until moistened, not over-mixing. Pour into 2 round pans, pre -sprayed with olive oil spray. Bake in pre-heated 350 oven for 30 minutes. Let cool before taking out of pan. Use one round cake for the bunny head and cut the other round cake to make bunny ears. The remaining cake makes a great bow-tie! Just spread thin layer of icing and sprinkle coconut over it while it is still moist. Arrange candies for bunny eyes, nose, mouth and ears!
