Peanut Butter Rice Crispie Bars

1 (8 oz) jar creamy peanut butter

2 Tbsp coconut oil

dark chocolate bark (optional)

 

In a large skillet over high heat, melt coconut oil and stir in peanut butter. Stir together and turn off heat as soon as coconut oil and peanut butter begin to liquefy. Stir in rice crispie cereal until it absorbs all of the peanut butter and coconut oil mixture. Pour all into a parchment lined 9×11″ pan, spread evenly, and refrigerate until firm. Slice into bars and serve!

Optional topping: Melt dark chocolate bark in microwave or stove-top. Pour over Peanut Butter Rice Crispie mixture in pan and refrigerate until firm. Slice into bars and serve!
