1 package of 8 fresh peaches, pared and cut into 1-2″ pieces

Easy Peach Pie

1/4 cup flour

1/4 cup agave

4 tsp Earth Balance nondairy butter

1-2 tsp cinnamon

2 ready-made pie shells

Set pie shells out to thaw. Once thawed, turn pie shell over into your glass pie dish. Then, invert your second pie shell onto a cutting board and slice into 1/2″ strips. Stir flour, agave and pared peaches together. Pour peach mixture into first pie shell inside pie dish and top with butter. Alternate crossing strips of pie crust creating a lattice pattern.  Seal sides of crust by using a fork to crimp the edges. Sprinkle top with cinnamon. Cover edges with 2-3″ of aluminum foil to prevent edges from turning dark. Bake in 375 degree preheated oven for 30 minutes. Take off aluminum foil and return to oven until lightly brown on edges, about 10 more minutes. Remove from oven, slice, serve and enjoy!

Easy Peach Pie has become a favorite in my household! We enjoy it with a scoop of vanilla non-dairy ice cream!  Easy and delicious!
