Carob Pecan Tarts

1 cup chopped pecans

1/4 cup carob

1/2 cup agave

1 tsp vanilla

1 tsp cinnamon

1/4 tsp sea salt

2 Tbsp cornstarch

1/4 cup coconut milk

1/2 pkg extra firm tofu

1/4 cup olive oil

 

In medium saucepan, cook brown sugar and agave for about 10 minutesĀ  stirring frequently.

Remove from heat and add vanilla and oil. In food processor with S blade,, mix tofu, carob, coconut milk, cornstarch, cinnamon and sea salt.

Add sugar & pecan mixture until well blended. Cut out 3″ circles of pastry and insert into mini- cupcake pan. Fill pastry lined cups with pecans and then the carob mixture.

Bake in 350 oven for 30 minutes or until lightly brown.
