2 cups dry oatmeal

Carob Oatmeal Bars

1/2 cup agave

3/4 cup dairy-free butter

1 tsp vanilla

1 tsp ground cinnamon

1/4 tsp sea salt

3/4 cup smooth peanut (or almond) butter

1 cup mini carob chips, saving 1/8 cup to sprinkle as topping

 

Line 8×8″ glass bowl with parchment paper. In a medium saucepan over low heat, add agave, butter and vanilla until butter is dissolved.

Add oats, cinnamon, and sea salt and stir for about 5 minutes. Meanwhile, in a microwave safe dish, melt carob chips into peanut butter

for about 30-40 seconds or until melted when stirred. Pour half of oatmeal mixture into parchment lined pan, pour most of the melted carob

and peanut butter mixture over oatmeal mixture, then finish adding remaining oatmeal mixture over the oatmeal mixture. Drizzle remaining

carob and peanut butter as topping and sprinkle 1/8 cup mini carob chips over the drizzle! Refrigerate until firm, then cut into small squares to serve!
