2-3 roasted sweet red & yellow peppers, cut into 1/4″ pieces

Veggie Pasta with Avocado and Roasted Sweet Peppers

1 ripe avocado, peeled & cut into 1/2″ pieces

1 pkg rainbow spiral veggie pasta, cooked according to pkg instructions, drained and refrigerated

1/2 cup Goddess dressing (tahini with lemon)

 

In large stockpot, boil water and add pasta. After boiling for 10 minutes, drain and refrigerate.

Chop roasted sweet peppers and avocado into pieces. Add sweet peppers, avocado, and dressing to pasta.

Refrigerate until ready to serve.
