2 cups baby spinach

1 zucchini, sliced and quartered

1 cucumber, sliced and halved

1 pkg cherry tomatoes

1 red onion, sliced and cut into 1″ pieces

1 crown broccoli, cut into 1″ pieces

1 head cauliflower, cut into 1″ pieces

 

 

In separate bowls, divide veggies into equal parts and store remaining veggies in separate zip-lock bags in refrigerator.

Top veggies with your favorite dressing or make your own by adding a little oil and vinegar to each bowl.

 

Veggie Bowls can be made individually, or made ahead of time and stored in plastic containers for easy meal prep for lunches!
