1 bunch fresh asparagus spears

1 cup Panko bread crumbs

2-3 Tbsp olive oil(or olive oil spray)

1/2 cup Veganaise

1 tsp lemon juice

3 Tbsp Dijon mustard

 

Rinse and trim ends off asparagus spears. Place on flat pan lined with aluminum foil. Mix Veganaise, lemon juice, and mustard together and baste asparagus spears. Sprinkle bread crumbs over asparagus spears. Roast in preheated 425 oven for 20-30 minutes until golden and crisp.
