1 head purple cabbage, cut into 1/2″ pieces

1 bunch celery, sliced to 1/4″

1/2 pkg frozen chopped onion and bell peppers

2-3 Tbsp olive oil

1 Tbsp minced garlic

1 pkg vegetable broth

1 can Rotel Tomatoes

2 cans diced tomatoes

sea salt and ground black pepper to taste

 

Place vegetable broth in stockpot over high heat. Add garlic, olive oil, onions with bell pepper and celery. Add cabbage, and tomatoes and cover about 30 minutes or until tender.

Turn down heat to low or until ready to serve.
