1 pkg Rotini pasta, follow package directions

Pear-Spinach Pasta Salad

3 cups baby spinach

1/2 dried cranberries

1 can mandarin oranges, drained

2 cans drained pears, drained

Dressing ingredients:

1/2 cup olive oil

1/4 cup apple cider vinegar

1 Tbsp Dijon Mustard

 

In a medium pan with 2 cups boiling water, cook pasta for 10 minutes until tender. Drain and set aside.

In a large serving bowl, add baby spinach, mandarin oranges, pears and cranberries.

In a small container, mix together olive oil, apple cider vinegar, and Dijon Mustard.

Pour Dressing over pasta and stir in spinach and fruit. Refrigerate and serve when cooled. Enjoy!
