4 cups organic baby spinach

1/2 red onion, sliced & chopped to 1/2″

1/2 cup cherry tomatoes, halved

1/2 fresh cucumber, sliced & cut into 1/2″ pieces

1/2 fresh zucchini, sliced & cut into 1/2 ” pieces

1/2 fresh yellow squash, sliced & cut into 1/2″ pieces

1/4 red, yellow, & orange bell peppers, cut into 1/2″ pieces

2 stalks fresh celery, sliced into 1/4:” pieces

2 fresh carrots, sliced into 1/4″ pieces

2-3 Tbsp olive oil

2 tsp lemon juice

sea salt and ground black pepper to taste

 

In a medium bowl with lid, add spinach and fresh vegetables, oil, and seasonings. Stir and refrigerate until ready to serve.
