Fresh Avocado-Spinach Salad

1 avocado, peeled & sliced

1/2 cup cherry tomatoes

1/2 cucumber, sliced

1/2 zucchini, sliced

1/2 cup celery, sliced

2-4 banana peppers, capped & sliced

1/4 cup salad dressing (I like Goddess with Tahini and lemon)

 

In serving bowls, use about 1 cup baby spinach per serving. Evenly distribute sliced vegetables and top with cherry tomatoes and dressing. Enjoy!!
