1 box bow-tie pasta, cooked according to package instructions

Bow-Tie Pasta with Raw Veggies

1 cup broccoli, cut into 1″ pieces

1 cup cauliflower, cut into 1″ pieces

1 cup baby carrots, cut into 1/2″ pieces

1 avocado, peeled and cut into 1″ pieces

1 cup cherry tomatoes, cut in halves

1/2 cucumber, sliced and cut into 1/2″ pieces

1/2 zucchini, sliced and cut into 1/2″ pieces

1/2 yellow squash, sliced and cut into 1/2″ pieces

1 cup Italian dressing

 

Heat water to boiling in large pot, add bow-tie pasta, and let boil for 10-12 minutes. Drain and set aside to cool.

In a large bowl with a tight-fitting lid, combine all cut-up vegetables with cooked bow-tie pasta and stir in Italian dressing.

Best if allowed to chill in refrigerator before serving.
