1 can black beans, drained & rinsed

Black Bean and Rice Spinach Salad

1 pkg prepackaged brown rice, cooked according to package instructions

1-2 cups baby spinach

1 can petite tomatoes with juice

1 cup frozen meatless ground

1 Tbsp minced garlic

2-3 Tbsp olive oil

1 tsp chili powder

sea salt and ground black pepper to taste

1 Tbsp garlic hummus, each salad

1 Tbsp salsa, each salad

 

In a large skillet over medium heat, saute meatless ground in minced garlic and olive oil. Stir-in petite tomatoes and black beans. Season with chili powder and sea salt and ground black pepper to taste. Boil prepackaged brown rice in boiling water for 10 minutes according to package instructions. Open cooked rice and pour into skillet and stir well. Serve over bowl of baby spinach with hummus and salsa as toppings. Enjoy!!
