2 avocados, peeled and sliced

Avocado Salad

3-4 cups fresh organic baby spinach

1 cup cherry tomatoes, sliced in half

1/2 red onion, sliced thin and cut in half

small bunch of cilantro, cut into small pieces

2-3 Tbsp extra virgin olive oil

2-3 tsp lemon juice

 

In a large serving bowl, add spinach, cherry tomatoes, onion, cilantro and stir in olive oil and lemon. Refrigerate until ready to serve!

 

This tasty and colorful Avocado Salad was a healthy appetizer for our large family’s get-together!
