Vegan Stuffed Mushrooms Recipe

2 large mushrooms

1/2 tsp olive oil

1/2 pkg vegan cream cheese (Tofutti is good)

1/2 onion, chopped fine

1/2 pkg shredded vegan cheddar cheese (Daiya)

 

Cut stems off mushrooms and chop fine. Add to large skillet on high heat with onions in olive oil.

Remove from heat and mix in cream cheese. Stuff into mushroom caps and top with cheddar cheese.

Bake in oven-proof pan for 20 minutes.

Vegan Stuffed Mushrooms Recipe can be doubled, then frozen, and cooked for a crowd!
