1 onion, sliced & chopped
2 Tbsp olive oil
2 tsp minced garlic
1 green bell pepper, chopped without seeds
1 cup salsa
1 can black beans, drained & rinsed
2 tomatoes, chopped
1 avocado, peeled, sliced & chopped
2 cups baby kale, torn into small pieces
12 taco shells
Warm taco shells in 350 oven 10 minutes.
Cook onion, garlic, & bell pepper in large skillet
with olive oil about 5-10 minutes til tender.
Stir in black beans & salsa.
Place kale and avocado in bottom of warm taco shells.
Then fill with salsa & spicy black bean mixture.
Serve and enjoy immediately while crisp!
