Easy Vegan Black Bean Meal with Rice

2 cans black beans (drained & rinsed)
2 pkg instant brown rice
1 onion, chopped
2 Tbsp olive oil
1/2 tsp sea salt
1/2 tsp ground pepper
1 pkg meatless ground meat (optional)
4 quarts water
Boil water in medium pan on high.
Add 2 pkgs brown rice.
Return to boil.
Turn off heat & set 10 minutes.

Meanwhile, brown chopped onion in skillet.
Brown meatless ground if desired.
Add black beans and seasonings.
Cook until tender, about 5 minutes.

Pour out water from rice and open packages.

Serve black beans over rice for your first easy vegan black bean meal.
Then mix beans and rice together to save as leftovers.

or corn taco shells topped with your favorite salsa!
