1 pkg extra-firm tofu
1/2 pkg frozen onion with bell peppers
1/4 cup green onions, sliced
1/2 tsp ground cumin
1/2 tsp ground turmeric
1 Tbsp chopped cilantro
2 Tbsp olive oil
Sea salt and ground pepper to taste
Add onion mixtures to olive oil in large skillet and cook on medium.
Crumble tofu in skillet as onions become clear.
Add cumin and turmeric for flavor and color and stir in cilantro.
Cook 5 min or until liquid is absorbed.Season with sea salt and ground pepper to taste.
1/2 pkg frozen hash browns
2-3 Tbsp olive oil
In a separate skillet, heat hash browns on high in olive oil till browned.
Serve side by side or mix together.

I really loved it because I enjoy breakfast but do not consume dairy:)
